Easy Chicken Fried Rice

1 egg
1 tablespoon water
1 tablespoon butter
1 tablespoon vegetable oil OR sesame oil blend
1 onion, chopped. 1 clove garlic optional
2 cups cooked white rice, cold
2 tablespoons soy sauce
1 teaspoon ground black pepper
1 cup cooked, chopped chicken meat
1 bag of peas and carrots
1. In a small bowl, beat the egg with water. Melt the butter in a large frying pan over medium heat. Add your egg and leave flat for 1 to 2 minutes. Remove from skillet and cut into shreds.
2. Heat oil in the frying pan; add peas, carrots, onion, and garlic to the frying pan. Then saute until blended. Add your rice, soy sauce, the pepper and chicken portions. Stir fry everything for five minutes and serve right away!
